Grilled Salmon with Mango Salsa and Vegetable Stir-fry

Ingredients:

  • 2 salmon fillets

Instructions:

  1. Prepare the Mango Salsa:
    • In a bowl, combine diced mango, red bell pepper, red onion, cucumber, cilantro, lime juice, salt, and pepper. Mix well and set aside to let the flavors meld.
  1. Grill the Salmon:
    • Preheat your grill to medium-high heat.
    • Season the salmon fillets with salt and pepper.
    • Brush the grill grates with olive oil to prevent sticking.
    • Place the salmon fillets on the grill, skin side down, and cook for about 4-5 minutes per side, or until cooked through and slightly charred on the edges. Cooking time may vary depending on the thickness of the fillets.
  1. Prepare the Vegetable Stir-fry:
    • Heat olive oil in a large pan or wok over medium-high heat.
    • Add minced garlic and sliced onion to the pan, and sauté until fragrant and translucent.
    • Add julienned carrot, bell pepper, snow peas, and broccoli florets to the pan. Stir-fry for 3-4 minutes, or until the vegetables are tender yet still crisp.
    • Season the stir-fry with salt and pepper to taste.
  1. Serve:
    • Serve the grilled salmon hot, topped with a generous spoonful of mango salsa.
    • Serve the vegetable stir-fry on the side, along with cooked rice.
