Vegan Oatmeal Cookies

Here’s a recipe for vegan oatmeal cookies that uses affordable ingredients commonly found in the Philippines:

Ingredients:

1 cup rolled oats (Quaker oats or any local brand)

1 cup all-purpose flour

1/2 cup brown sugar (washed or mascovado sugar)

1/2 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon ground cinnamon

1/2 cup coconut oil (or any vegetable oil)

1/4 cup coconut milk (or any non-dairy milk like soy or almond milk)

1 teaspoon vanilla extract

1/2 cup raisins or chopped dried fruits (optional)

1/2 cup chopped nuts (optional)

Instructions:

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or lightly grease it.

Mix dry ingredients: In a large bowl, combine the rolled oats, flour, brown sugar, baking soda, salt, and cinnamon. Mix well to ensure even distribution of ingredients.

Add wet ingredients: Add the coconut oil, coconut milk, and vanilla extract to the dry mixture. Stir until the ingredients are well combined. The mixture should be slightly sticky. If it’s too dry, add a bit more coconut milk.

Fold in optional ingredients: If using raisins, dried fruits, or nuts, gently fold them into the mixture until evenly distributed.

Shape the cookies: Scoop out spoonsful of the dough and roll them into balls (about 1 tablespoon each). Place them on the prepared baking sheet and flatten them slightly with your hand or a spoon.

Bake: Place the baking sheet in the preheated oven and bake for 10-12 minutes or until the edges of the cookies are golden brown.

Cool: Remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Serve and enjoy: These cookies are delicious on their own or with a glass of non-dairy milk.

Tips:

You can substitute the coconut oil with any affordable vegetable oil available in your area.

Coconut milk can be replaced with other plant-based milks, but coconut milk gives a richer flavor.

If you don’t have vanilla extract, you can skip it or use a bit of vanilla-flavored sugar instead.

Adjust the sweetness by adding more or less sugar according to your taste.
